The Leviathan 310 is built as a statement performance knife for serious kitchen work.

Designed for high-volume prep and demanding ingredients, this long gyuto combines powerful stiffness at the heel with a highly refined, precise tip through an aggressive distal taper.

Forged from tough 80CrV2 high-carbon steel and heat treated to approximately 62 HRC at the edge, the blade offers exceptional cutting bite, edge stability and durability. The hand-ground geometry is optimized for efficient food separation and confident push or draw cutting across a wide range of products.

A subtle hand-finished kasumi surface with visible hamon gives the blade a raw, forged character while maintaining a clean and functional aesthetic. The stabilized curly birch hardwood handle provides a secure grip and visual depth, completing the knife’s brutal yet refined presence.

Tank & Steel – K-Tip san mai Gyuto

A long, aggressive Gyuto designed for precision work and fine slicing.

The blade is forged from an 80CrV2 core with stainless steel cladding (San Mai construction). The high-carbon core takes a fine, durable edge while the stainless cladding reduces maintenance and adds contrast to the blade finish.

The K-tip profile provides excellent control for detailed cuts while still offering enough length for larger prep tasks. A subtle forged texture and hand-finished bevels give the blade its raw, functional character.

The handle is crafted from dark american Walnut, shaped with subtle facets for a secure and comfortable grip.

Built as a versatile kitchen companion — capable of everything from precise vegetable work to trimming proteins and slicing smaller ingredients.

 Damascus Paring Knife

A compact paring knife forged from 1084 / 15N20 Damascus and heat treated to 60 HRC for a hard, stable edge with reliable toughness.

The 75 mm blade offers precise control for detail work, small prep tasks, herbs, fruit, and trimming. At 3.5 mm thickness at the heel, it has a solid, confident feel while tapering into a fine, responsive edge.

The handle is made from charred zebrano wood, giving it a deep black tone with subtle grain texture and a durable, structured surface. A hand-textured copper bolster adds weight, balance, and will develop a natural patina over time.
